Coconut curry


This has to be the simplest but yet tastiest curry ever!

I like to use prawns because, I love the taste and texture, but also because they only take 2 minutes to cook.

Here’s what you’ll need:


  • 400g king prawns
  • 2 tbsp grated fresh ginger
  • Chilli
  • 1 large onion
  • Garlic
  • 1 whole pepper
  • 4 large handfuls of spinach
  • 1 can of organic coconut milk
  • 2 teaspoons of curry powder
  • 1 teaspoon of sea salt



Mix the can of coconut milk, 2 teaspoons of curry powder, 1 teaspoon of salt and ginger into a bowl and set aside. This will be your curry sauce.

Chop your pepper and onion, and fry for 2 mins in coconut oil. Add the curry sauce and simmer for 5 mins. Add the prawns and cook until pink. Add any other vegetables you also want at the same time as the prawns.

Serve with rice.
